Corn Fritters

Ingredients:


Vegetable oil as needed
¾ C cornmeal
½ C all-purpose flour
2 teaspoons baking powder
Salt and black pepper to taste
½ teaspoon sugar
¾ C milk, plus more if needed
1 egg
2 C thawed frozen corn kernels


Place vegetable oil, to a depth of as least 3 inches, in a deep saucepan over medium-high heat. Let the oil heat while you prepare the fritter batter; it should reach a temperature of 365° to 375° F.

Combine dry ingredients in a large bowl. Beat together the milk and egg, then combine with the dry mixture, adding a few tablespoons more of milk if necessary to make a thick but smooth batter. Stir in the corn.

Drop the fritters by the quarter-cup or large spoonful into the hot oil. Raise the heat to maintain a fairly consistent temperature. Cook fritters in batches. Turning once, until nicely browned on all sides, a total of about 4 to 5 minutes per batch. Drain fritters and place in a 200° oven to keep warm.

Serve these as a side with salsa for Southwest attitude, with maple syrup for Southern breakfast or with a mixed green salad joined with your favorite dressing. Fritters are great along side beef, chicken or pork.

President Report

PRESIDENT'S REPORT President’s Report:

WOW! There is so much to be excited about and grateful for in the world of catering and special events. The April NACE meeting lived up to its’ name…Table Top Wow! In the past, many of us took our profession for granted. During these times, we’ve all received a wakeup call and now NACE members are appreciative of the opportunities before us every day. It was great to see so many people step up and let their creative juices flow and create table top designs that inspire all of us to reach new levels. Isn’t growing as individuals and professionals a huge portion of what NACE is all about?

It was not that long ago and there was this sense of entitlement in our industry. It was a time when I heard comments like ‘if you don’t like it go somewhere else.’ Today, as an industry, we are getting back to our roots. We are practicing the core values that create trust and respect between our clients, vendor partners, and our fellow team members. We are pursuing excellence and financial success with honor and integrity. More and more people are seeing the value of membership in professional associations like NACE because they understand the need to constantly strive to be better in every area of their lives. Take a look at the list of people who have joined NACE just the since the beginning of the year. Our membership is up…way up!

Your chapter leaders and I want to create membership value for you. That is why we made the bold decision to bring in the keynote speaker from last year’s educational conference. You absolutely must mark your calendar and tell all your friends about next month’s meeting (May 20th at the Troy Marriott). I promise it will be one of the most inspiring and uplifting meetings you have ever attended. Our guest speaker, Cindy Novotny, is one of those gifted individuals that will have you sitting on the edge of your seat listening intently to every word. She’ll do it in a way that I’m sure will have your head spinning with ideas and thoughts for hours after her talk. Let’s face it…we all need some inspiration from time to time. I believe this will be an evening that will stay with you for the rest of your life. Please don’t miss this opportunity. Cindy will be a gift from your NACE chapter you will forever cherish. She will be talking about leadership, service, sales, and consulting. She’ll weave these topics in as they relate to our everyday life. Cindy is a national recognized speaker and her company was listed in the top 25 by Sales & Marketing Magazine. We have Kelly Brennan, NACE Vice President, to thank for making this opportunity happen. She has been working on it for nearly a year. This meeting will be a dessert and coffee reception so please have a bite to eat before attending.

Over the past month I’ve had the opportunity to travel to NACE chapters in Baltimore and Denver and I’m proud to share with you how awesome our Greater Detroit Chapter is. Seeing how other chapters operate and what they offer their members made me proud of our chapter. Sometimes you don’t realize how good you have it until you have something to compare it to. Lastly, our membership drive continues until the middle of May. There has never been a less expensive time to join NACE. The Finalizations and Logistics Technician is responsible for finalizing all orders and making arrangements for local services (deliveries, installs, etc).  This individual also assists the Detroit Sales Manager with sales and oversees the Local Install Team.  Other duties as assigned.

  • Must possess above-average organizational skills and problem solving skills.
  • Must have the ability to be flexible on shifts, including weekends.
