NACE FAMILY! Have you run through all of your favorite recipes already? Are you looking for something fun, fresh, and EXCITING to cook for the family? Join us for our first edition of "Cookin' with the Carlisles" where we'll all get a complimentary cooking lesson from the man, the myth, the legend, Chef Kenny! Accompanied by his beautiful wife, Sous Chef, and our Director of Membership, Rachel - Cookin with the Carlisles is sure to SPICE up your kitchen! We've got a delicious entree on the menu and will also cover the safest way to wash your produce and keep your food and bodies clean. Now, the big question you ask....what are we making??


Serves 4 (with some leftovers)

You'll need the following ingredients to cook with Kenny  - use what you have in the pantry and/or add these to your list for your next shopping trip before May 20th!
1 lb chicken breast (can substitute firm tofu for vegetarian/vegans)
1 garlic bulb
1 fresh ginger root
2 Tbsp honey (substitute agave nectar for vegans)
1 bottle Tamari (or soy sauce)
16 fl ounces olive oil
½ lb corn starch
8 fl ounces toasted sesame oil
8 fl ounces rice wine vinegar
2 cups rice (Basmati or long grain white rice)
3 carrots (full size)
1 cup frozen peas
2 red bell peppers
1 bunch green onion
3 large eggs
1 white onion
1 – 8oz can sliced water chestnuts
8oz sugar snap peas
8oz shiitake mushrooms (can substitute cremini or button based on availability)
1-2 broccoli crowns
1 ounce toasted sesame seeds
Kosher salt and black pepper to taste

Red pepper flakes (optional)


Skosh Catering is a boutique off-premise catering and events company located in Walled Lake serving the Metro Detroit area. This husband and wife team, Kenny and Rachel Carlisle, just launched Skosh Catering in 2019 (great timing, right!?) after many years of experience working with other catering companies in the area. You might recognize Rachel as our Detroit NACE Director of Membership - or you might not yet since we've only been able to host 2 events so far in 2020. She is the Director of Catering and handles everything from sales to service to accounting. Chef Kenny is typically behind the scenes running the kitchen as Executive Chef, so we're excited for him to make his virtual debut!
